Preserved lemons offer more than just brightness – they bring a distinctive salty-sour-sweet balance. Ottolenghi has softened their intensity with herbs and olive oil to create something that elevates without overwhelming. Lovely with fish and chicken, but equally good with roasted cauliflower or drizzled over a simple salad.

• Ingredients: preserved lemons, extra virgin olive oil, water, sugar, onions, sunflower oil, salt, lemon juice, garlic puree.
• Store in a cool, dry place. Once opened, keep refrigerated and consume within 4 weeks.
